Boat Noodle Soup or Kuaitiao Ruea is a rich pho-like noodle soup. This rich bowl of goodness was originally served by vendors in canoes as they paddled down the canals of Bangkok, hence the name “boat noodles”. This local dish is served with fresh bean sprouts, pork or beef meat balls, Thai basil, crispy pork skin, and a row of condiments. It also contains nam tok, which is cow or pig blood mixed with salt to season the broth. If drinking animals blood is too adventurous for you, just say Nam Sai, to order it without.
