ENJOY A PARISIAN DESSERT BUFFET CURATED BY PASTRY CHEF THANAKORN THONGPA AT FOUR SEASONS RESORT CHIANG MAI

   In blending flair and art, the repertoire of Pastry Chef Thanakorn Thongpa - Chef Paul - has an uninhibited capacity to melt hearts. Born in Thailand but raised in the heart of France, Chef Thongpa’s culinary journey traces a unique path between a tropical Asian heritage and a classical French tutelage. At Four Seasons Resort Chiang Mai, he has created an inspired range of desserts that reflects this fascinating journey and champions the rich variety of seasonal fruit in Northern Thailand. From pistachio éclairs, apple almond pie and mocha éclairs, to lemon mojito cakes and salted caramel choux, there is little restraint in his passion and creativity in the menu.


Sweet Sensation

   Starting November 12, 2023, guests will be treated to a premium Parisian dessert buffet every other Sunday at KHAO by Four Seasons. “I wanted to capture the essence of a Parisian café or patisserie, where every bite conjures up an image from the City of Love,” smiles Chef Thongpa. Interpreted as works of art, this handcrafted menu features the finest locally sourced ingredients that add a delicate touch of the tropics.


Memories Bring Back Memories

   Reminiscing his time in Paris, Chef Thongpa recounts frequenting the Avenue de L’Opera and Avenue Victor Hugo, where the sights and smells from the many boulangeries and patisseries would intoxicate him. “I loved my mother's Thai puddings and desserts, but I was also intrigued by the divergent palate of the French,” he shares. “So I started experimenting - bringing these two rich cultures together - when I went to pastry school.” His endeavours behind the scenes came to fruition with spectacular success, and he is thrilled to see guests coming back for more of his favourite creations. “These are top-draw desserts, crafted right here in the midst of our paddy-field setting, and to share this experience with family and friends at KHAO by Four Seasons can be simply unforgettable,” he smiles.
