RECIPE - Mango With Sticky Rice

RECIPE

   Mango with sticky rice is a healthy and satisfying dessert featuring sweet gooey sticky rice served with a luscious coconut sauce and sliced mango. This homemade version is quite easy to prepare (gluten-free, vegetarian, vegan).

Ingredients:

  • 1 cup of sticky rice or glutinous rice, soaked for 4-6 hours to achieve the perfect texture.
  • 1 cup of velvety coconut cream, providing a rich and creamy consistency to the dish.
  • 2 tablespoons of palm sugar, adding a touch of natural sweetness.
  • 2 pinches of salt, enhancing the flavors and balancing the sweetness.
  • 1 beautiful, ripe mango, perfectly complementing the sticky rice with its tropical essence.
  • Toasted sesame seeds, adding a delicate crunch and nutty aroma

Preparation:

  1. Soak the sticky rice in water. Drain it up and bring to steam over medium heat about 20 mins.
  2. Remove the rice from the steamer and mix with coconut cream, sugar and salt immediately. Stir gently.
  3. Cover and let stand for about 1/2 hour.
  4. Portion out the ric to each serving bowl then add the mango and garnish with more coconut sauce and sesame seeds.
