Starting in September, participants can join the Tea Connoisseur Program - From Leaves to Sip, on the 13th and 14th. This foundational course is perfect for anyone passionate about tea. Dive deep into the rich history, key facts about major tea-producing and exporting regions, tea consumption, tea botany, types of tea, production processes, and more. Additionally, you’ll explore the art and culture of tea drinking, learn various brewing methods, and taste a variety of teas.
In October, the school continues its offerings with the International Tea Sommelier Intermediate Program - From Soil to Serve, on the 7th and 8th. In this course, you will understand the entire tea production process from start to finish at the Raming Tea Estate, Doi Chiang Dao. You will visit production facilities and learn about each step before the tea reaches consumers. During two days you will develop your sensory evaluation skills, analyze teas, and learn to describe them using specific tea-related terminology. You will also learn to grade tea according to international standards, and conduct comparative tastings of various grades and seasonal teas from renowned global regions, then learn about organizing Afternoon Tea and serving tea to create a lasting impression on customers.
This special course will be followed closely by the International Tea Sommelier Advanced Program on the 10th and 11th. This class focuses on advanced comparative tasting and sensory analysis, enhancing your ability to identify and articulate tea characteristics accurately. During two days you will conduct in-depth tastings of green, yellow, white, oolong, black and dark teas from world-renowned regions, as well as Tisane and herbal blends. You will also learn to brew tea using different types of water from various countries. Then analyze tea quality and detect production or storage issues through taste and aroma. Finally you will master the art of tea and food pairing, enjoy specially curated menus.
As the year progresses, the school offers additional opportunities for tea exploration. In November, the Tea Connoisseur Program returns on the 15th and 16th, followed closely by an immersive Tea Tasting & Blending Master Class from the 18th to the 20th. This course is designed for those who wish to advance their tea blending skills. You will learn to create unique tea blends that tell a story and reflect creativity.
