Travel to South Italy this week with Shangri-La Hotel Chiang Mai, featuring Michelin Star-Awarded Chef Pasquale Palamaro.
From December 6-11, guest Chef Pasquale takes over Dhala Pool Garden Restaurant for daily special lunches and dinners, inspired by the deep sea of Italy. Be delighted by his lemon basil-scented Hamachi tartare in a sea urchin illusion with buffalo mozzarella and his seabass and foie gras skewer, Martini Dry-scented carrot cream and pineapple chutney. Chef’s piece of art is the Carnaroli risotto with prawns, tossed with citrus-flavored butter and a sprinkle of beetroot powder: an exquisite plate in which the risotto has been roasted, topped with notes of lemon, oranges and beetroot.
Lunch includes four very special dishes while dinner offers an additional two. Each plate is a real piece of art, taking us visually to the deep sea of Italy with corals, sea urchin and pearls. The grand finale is a pearl of passion and a chocolate stone shell with mango puree and caramel mousse.
Chef Pasquale Palamaro was born in 1978 in the wonderful island of Ischia in South Italy, he has collaborated with international starred Chefs, as Aimo e Nadia, Ugo Alciati, Emanuele Scarello and Alfonso Iaccarino. Though beaches and hotels stud Ischia's sparkling coastline, the island's heart is Mount Epomeo. This 2,589-foot slope reaps citrus fruits, chestnuts, tomatoes, broad beans, artichokes, black broccoli, tender onions, and the Zampognaro bean, an endangered legume protected by the Slow Food Presidium. So many fruits and citrus that inspired Pasquale and color his cuisine.
